Vanilla Pecan Porridge With Fruits and Berries

There's a reason why porridge was such a popular breakfast food in the olden days. Oats contain complex carbohydrates which digest slowly, meaning that they'll fuel you through the day and you won't suffer from blood sugar spikes or troughs. Not only this but oats are rare in that they actively decrease bad cholesterol - and that's a good enough reason for us!

INGREDIENTS

1/2 cup oats

1 1/5 cups of milk/nut milk

teaspoon of cinnamon

a handful of pecans

a handful of goji berries

1-2 teaspoons of Mānuka honey to sweeten

1/4 teaspoon of vanilla extract teaspoon of vanilla seeds

a pinch of salt

strawberries and raspberries to garnish

 

DIRECTIONS
  1. Place your oats in a small saucepan

  2. Add your salt, cinnamon, vanilla, half of the goji berries and your liquid, setting a little extra aside for later if you like your porridge on the runny side.

  3. Cook your oats until simmering then allow to thicken on low heat for about 2 minutes.

  4. Turn off the heat and add half of your pecans (chopped).

  5. After a couple of minutes, add your additional liquid if desired, and your honey.

  6. Pour into a bowl and top with your left over pecans, cinnamon and fruits.
