BLUEBERRY FLATBREAD PIZZA WITH GOAT CHEESE, ALMONDS & HONEY
There's something to be said for the sweet-savoury combo, and we've come across a wonderful recipe by Laura from Delicous AF Food that does just that. Laura's created a recipe for us that combines the delicious pungent flavours of goats cheese (we admit it's not for everyone - but we love it!), with the delicate sweetness of blueberries and a touch of manuka honey.

Ingredients
1 naan bread
1/4 cup goat cheese (crumbly or spreadable)
1 tbsp shaved/slivered almonds
1/4 cup blueberries
orange zest (from half an orange)
2-4 sprigs of fresh thyme
pinch of salt and pepper
1 tbsp honey

Preheat the oven to 220°C.

Place your pizza base on a sheet pan or pizza stone.

Spread or crumble the goat cheese over your base and top it with almonds, fresh blueberries, orange zest, fresh thyme and a pinch of salt and pepper. Then pop it into the oven for 5-7 minutes.

Once toasted drizzle on some honey, slice it, serve it warm and enjoy!
With minimal prep and cooking time, this is a great meal for when you don't have much time. To turn it into dinner, we recommend serving up with a simple side salad to get some extra greens in. Alternatively to the flatbread base, you can try this on a cauliflower base and for an extra-crispy base we try investing in a pizza stone - you won't regret it.
