Manuka, Blueberry & Banana Bread
Our banana bread (with optional blueberries) is the perfect treat for those days when you can't shake a craving for a few sweet mouthfuls. The recipe has replaced sugar with honey, which tastes sweeter per spoonful. Try this super simple recipe for a moist loaf of banana laden goodness, extra points if you can save some for a friend - we couldn't!

Ingredients
2 cups all-purpose flour
1 1/2 teaspoons of baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon powder
2 eggs
6 ripe bananas
1/2 cup of Gourmet or Manuka Honey
1/2 cup oil (coconut tastes good!)
1 cup blueberries
Directions

Pre-heat the oven to 180 degrees Celcius.

Mash 5 of the bananas (set one aside), transfer to a large bowl and which in the eggs, honey and oil.

Add the dry ingredients (through a sieve if you have one), and mix well.

Add the blueberries if desired and gently fold the batter.

Slice the remaining banana in half long-ways and place in the bottom of a pre-greased cake tin with the sliced sides facing the tin. Pour the cake mixture into the tin, over the bananas.

Bake for around 55 minutes or until a skewer/toothpick comes out clean.
- Allow to cool, then serve up with tea or coffee.
